
Slow Cooker Hearty Ham and Bean Soup
Although I live in Texas, we do have our fair share of chilly days in the winter. On the cold and rainy days, I always finding myself craving either something from the Crockpot or a nice hearty soup with some crackers. Krista from Everyday Mom’s Meals has a fabulous recipe for a hearty Ham and Bean Soup that is just perfect for a chilly winter day.
While, I’m not a huge fan of ham on its own. I do love ham in different recipes. J is also a huge fan of ham, so finding a great recipe that incorporates it for him is wonderful. He is patient with all the chicken and turkey I cook with, so sometimes I like to try something a little different for him.
But the great thing about this recipe is that I can see it easily being made with other protein. Grambo is only eating chicken, turkey, and fish these days so we enjoy a lot of ground turkey. I think that Krista’s recipe could easily be tweaked to be a great Turkey and Bean soup. I may have to try that next!
Shopping List
- 2 c. 12-bean soup mix
- 1 lb. diced ham
- 2 c. chicken broth
- 6 c. water
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 1 (15 oz.) can diced tomatoes, undrained
- 1 (10 oz.) can tomatoes with green chilies, undrained
- Salt and Pepper to taste
In the Kitchen
- Place beans in slow cooker, OFF, and cover with water.
- Soak over night.
- The next day, drain beans well. Place back in slow cooker.
- Add all other ingredients.
- Cook on HIGH 4 hours. Lower heat to LOW and cook 3 additional hours.
Krista likes to serve this Slow Cooker Ham and Bean soup with whole wheat Texas toast croutons. They are easy to make! You just butter both sides of a slice of bread and toast it in a skillet. Then cut into bite sized pieces and garnish your soup!
I love this idea but I’m a huge fan of croutons and bread! If you’re looking for a new Slow Cooker recipe or just a hearty soup to feed your family on a cold, winter day, I would definitely recommend this one! Tweak the ingredients to meet the tastes of your family and you have an easy dinner that’s sure to please!
