
Ham and Swiss Noodles Recipe
Have you ever had leftovers sitting in your fridge that you knew had potential? I do. All the time. But I’ll be honest and admit that they usually end up in the trash. I lack inspiration. But I love the Ham and Swiss Noodles recipe Krista from Everyday Mom’s Meals shared this week! It’s so simple and yet I don’t think I ever would have thought of it myself!
We don’t eat a lot of ham around here. J would love to have it more often. But I never know what to do with all of the leftover meat. And J will only eat so much of it in sandwiches. But add some swiss cheese, veggies, and noodles to create completely different feel from a ham sandwich? Perfect!
What you need:
- 1 lb. egg noodles
- 2 c. cooked ham, diced
- 10 oz. frozen peas, thawed and drained
- 1 (4 oz) can sliced mushrooms, drained
- 3 green onions, chopped
- 8 TBS butter, divided
- 1/4 c. four
- 3 c. milk
- 8 oz. shredded Swiss cheese
- 1 TBS dried parsley
- Salt and Pepper to taste
What you do:
- Cook egg noodles according to package directions.
- In a large saucepan cook green onions in 2 TBS butter for 3 minutes.
- Add mushrooms and peas. Cook for 5 minutes or until heated through. Remove from pan and set aside.
- Melt 6 TBS in saucepan. Add flour, whisking until smooth. Cook for 1 minute, stirring constantly.
- Gradually add the milk and cook over medium heat. Stir constantly until mixture thickens and bubbles.
- Add cheese in small batches and stir in a figure 8 motion until cheese is completely melted and sauce is smooth.
- Season with salt and pepper.
- Add vegetables and ham. Mix well.
- Cook for about 10 minutes on low or until heated through.
- When noodles are done, drain and return to hot pot. Add 2 TBS butter and parsley. Stir well until noodles are coated.
- Serve ham mixture over egg noodles.

Although it has a handful of steps, it’s really simple to throw together. And I love that it would work with other leftovers. I think it would be great with chicken and turkey too! Oh and I want to try it with a can of tuna. I love tuna casserole but this seems like a much easier approach. And you know that I like things that are easy!

I doubt there would be leftovers if I made that, since my hubby would LOVE it! I’m thinking of trying it with the super-wide whole wheat noodles that are similar to egg noodles, and turkey ham. Yum!
