
Easy Pumpkin Cake Recipe
As you know, I’m all about easy when it comes to being in the kitchen. I love baking, but I’m not one to bake cupcakes from scratch. I don’t know how to make my own buttercream frosting. But my family seems to enjoy the sweet goodies I make. So when my mother-in-law passed on this easy pumpkin cake recipe, I was ready to try it!
If you like pumpkin and you like spice cake, then you will love this recipe. It’s quick and easy. Oh, and the ingredient list is simple too!

Make Your Own Easy Pumpkin Cake
Here’s what you need to make your own easy pumpkin cake:
- 1 box spice cake mix
- 1 can pure pumpkin
Yep, that is all you need! Well, and a cake or muffin pan or two!

What do you:
1. Empty the cake mix and pumpkin into a bowl.
2. Mix until well blended. You don’t want any lumps of cake mix left.


3. Fill cake pan or muffin pans and bake according to the directions on the cake mix box.
4. Cool and serve.
You don’t need any frosting because this easy pumpkin cake comes out extremely moist! Each of my mini cupcakes was only 42 calories! I also made some regular sized cupcakes that came in at about 126 calories! I love sweet treats that don’t add ten pounds! Especially because I find sweets hard to resist during the holidays!
