
Easy Mexican Corn Recipe
If you know me, you know that I do enjoy getting in the kitchen. Love it. But usually I enjoy baking and working on sweet things. Of course even when I’m doing that, I’m not baking from scratch. I’m definitely a semi-homemade type of mom. And my easy mexican corn recipe is a perfect example of how I use items from the frozen food section to make food my family loves!
A two ingredient recipe? Now that is what I call simple! But could it really be that tasty? Doesn’t a recipe need to be a bit more complicated and have a longer ingredient list to be good? I’ll admit that I wasn’t sure. But I needed an easy side dish with a mexican flare to go with my Fish Taco Twists so I was ready to try!
So I grabbed a bag of our favorite Bird’s Eye Steamfresh Super Sweet Corn and a can of RO*TEL and set off to see what happened. In a few short minutes, I had a gorgeous (love those colors) side dish that smelled good. Grambo loves canned corn, especially southwestern style, so she was ready to try my mexican corn as soon as it was done.
The verdict? Family approved! The easy mexican corn had good flavor without adding any additional seasoning. Even though I opted for the mild RO*TEL, it still had a nice kick that went well with my fish taco dinner with a twist!

Shopping List
- 1 bag of Bird's Eye Steamfresh Super Sweet Corn
- 1 can RO*TEL
In the Kitchen
- Cook the Bird's Eye Steamfresh corn according to the directions on the packaging.
- Drain the liquid from the can of RO*TEL.
- Mix in a large bowl and serve!
