St. Patrick’s Day Cake Balls

As you might know, cake balls are one of my favorite sweet treats to make. Why? Because they are simple to make and there are so many different flavor combinations! You can see all of my combinations for cake balls and judge for yourself! But I hadn’t made any for St. Patrick’s Day yet! So with a few weeks to go, I decided to whip up a fairly straightforward combination.

I opted for vanilla cake with vanilla frosting because it is a family favorite around here. I did spice it up a bit though by going green! With my soda cake swap, these little bites were quick and easy to make as well!

Cake Balls Go Green!

With the addition of a few drops of green food coloring in the cake batter, my white cake quickly became more festive! Then I baked it up and let it cool so we could get down to business! Crumble the cake, add a bit of frosting, and start rolling! It’s a little bit of a messy process but getting older kids involved can definitely be a blast!

I think these would be a lot of fun with a green velvet cake as well. You could even dip them in green candy melts or chocolate to give an entirely different look. Remember my mention of the numerous possibilities? You can switch up the cake flavor you use or the frosting flavor! If you do the soda swap, you can use different soda varieties as well!

Cake Ball Tips and Tricks

I have a few tips for making cake balls a bit easier. I always put the cake into the freezer after I roll it into balls. It keeps the cake balls from getting as sticky while you’re dipping them. When I dip, I always dip one side first and let it cool. Then I dip the top and add my decorations. I never mastered rolling it in the melted almond bark so this way works well for me.

Oh, and set your finished cake balls on parchment paper or wax paper to cool. If you use sprinkles to decorate, it’s super easy to clean up if you use paper under them!

Shopping List

  • 1 box white cake mix
  • 1 can lemon lime soda
  • 1 tub vanilla frosting
  • 1 package vanilla almond bark
  • Green food coloring
  • Green sprinkles

In the Kitchen

  1. Heat oven according to directions on cake box.
  2. Mix cake mix and can of soda in a large bowl.
  3. Pour into baking pan.
  4. Bake according to directions on the cake box. Allow cake to cool completely.
  5. Crumble cake up into small pieces.
  6. Add 2 Tbs. frosting and mix thoroughly. Feel free to add additional frosting until you get the desired consistency. You want the cake to stick together.
  7. Roll cake mixture into balls.
  8. Freeze for 30-45 minutes. You can also refrigerate overnight.
  9. Melt almond bark per the directions on the packaging.
  10. Dip balls into almond bark and coat thoroughly.
  11. Decorate with sprinkles.
  12. Cool on parchment paper or wax paper.

  6. I made these for my daughter’s class tomorrow and they were super easy. I used Wilton chocolate candy chips and just rolled them around with a spoon until they were coated. They turned out really nice. Thank you!
