
Broccoli & Bacon Stuffed Potatoes
I’m pretty lucky because my family isn’t too picky when it comes to food. In fact we sometimes have trouble deciding what to eat because no one has a preference. So I often find myself falling back on things that are easy and I know everyone likes a lot. Baked potatoes are on that list for my family. So when Krista from Everyday Mom’s Meals shared her Broccoli & Bacon Stuffed Potatoes recipe, I was ready to try it!
My favorite thing about this recipe is that I can easily tweak each potato to meet everyone’s tastes. For example, Grambo doesn’t eat bacon unless it’s turkey bacon. So I have two options. Swap the turkey bacon or leave the bacon off and make her a broccoli cheese stuffed potato. It just depends on our mood really.
I can add other veggies or meat to the mix too. Krista has given me a great base recipe that is absolutely delicious but also flexible enough to let me get a little creative if I want! And it’s easy too! So it’s definitely my kind of recipe! I cannot wait to try it with some different types of cheese!
What you need:
- 4 large baking potatoes, rinsed and dried
- 12 oz. frozen broccoli
- 2 c. shredded cheddar cheese, small amount reserved for top
- 2 green onions, chopped
- 9 slices precooked bacon, small amount reserved for top
- Salt and Pepper to taste
What you do:
- Heat oven to 400.
- Wrap potatoes in foil, poke a few times to vent and bake 1 hour or until fork tender. Allow to cool 10 minutes.
- Combine frozen broccoli with 3 TBS water and microwave for 5 minutes until crisp tender. Drain well.
- Slice off a small portion, lengthwise, on top of each potato. Gently scrape out inside potato leaving a 1/4 inch shell.
- In a large bowl combine potato, broccoli, onions, cheese, bacon, salt and pepper.
- In a small bowl combine reserved cheese and bacon, making about 1/4 cup total.
- Mix potato mixture until well combined. Carefully spoon potato mixture back into potato shells. Top each with cheese/bacon mixture.
- Bake for 20 minutes until golden and cheese is melted.
