We have been Country Crock users for as long as I can remember! We’ve also been vegetable fans forever! With W, I’ve gotten very lucky and he enjoys a wide variety of vegetables. Sweet potatoes are one of the vegetables that he will sometimes eat and sometimes passes by. the rest of the family loves sweet potatoes so when I was recently browsing through the Clare Crespo Cookbook, I found an adorable recipe that I couldn’t resist! Country Crock Bear Paws Recipe

¬†These sounds so easy (which is important in our home) and so tasty! I love ideas that make mealtime more fun for kids and I am always looking for ideas to add to my recipe box! I was sure this one would be a keeper as long as it tasted good when I finished! The great thing about the Clare Crespo Cookbook is that it’s not about hiding the vegetables! It’s about using Country Crock to make veggies that taste delicious and that kids love!

Country Crock Bear Paws Sweet Potatoes

The Bear Paws recipe appealed to me because it included ingredients that we often eat and they are very simple ingredients. I will admit that when recipes have an ingredient list that takes up half the page, I get a little discouraged. The Bear Paws recipe was short and sweet which is exactly what I look for when I want to try a new recipe! I don’t mind having to put the food in the oven for a while, but I like the prep time to be short! I think this will become even more important as W gets older and gets busier!

Sweet Potaoes by Country Crock

I will admit that slicing the sweet potatoes according to the recipe was a bit challenging for me. The sweet potatoes I had were so awkwardly shaped that I had to be very careful to make sure that I didn’t injure myself! That’s how I ended up with some half slices. I figured that they would be fine for W! They also inspired me to consider baking sweet potatoes according to the recipe but slicing them so the slices are smaller and round. It could be a fabulous side dish without the cute factor.

Country Crock

We usually use the light Country Crock but I saw the Calcium with Vitamin D version when I was shopping and wanted to give it a try! Country Crock is a good choice when cooking because it has 70% less saturated fat and 30% fewer calories than butter. It also has 0g trans fat!

Country Crock and Cashews Make Sweet Potatoes Delish!

The sweet potatoes smelled delicious when I took them out of the own. They would have been a great side dish without any added touches and I’m pretty sure I will be making them again soon. It was simple to drizzle with Country Crock, sprinkle with nutmeg, and pop in the oven! I even went and ran 3 miles while they baked! It was wonderful to come back to a house that smelled so fantastic!

The sweet potato Bear Paws turned out to be absolutely wonderful! They were cute and they were tasted amazing! I will admit that I was pretty darn proud of myself. This is one recipe that will be finding a home in my recipe box because I think it will come in handy as W gets older!
